What is fli?
Fli, also known as flija, is one of the most loved dishes of Albanian cooking. A simple batter is spread in thin rays across a round pan, brushed with cream and baked. Then comes another layer, and another, until the pan is full.
Traditionally it is baked under a saç, a heavy domed lid covered with hot embers. A whole fli can take hours to make, which is why it is saved for family gatherings, holidays and the people you love.
Spread in rays
A thin batter is spread from the centre of the pan to the edge, like the spokes of a wheel.
Brushed with cream
Each layer gets a coat of cream before the next one goes on top.
Baked layer by layer
Heat from above bakes every layer until the whole fli turns tall and golden.
